Ingredients

- 6 sweet potatoes
- 4 boneless, skinless chicken breasts
- 2-3 Tbsp Olive Oil
- 1 cup chicken broth
- 12oz BBQ sauce
- 1 Onion
- Salt & pepper, to taste
- Garnish: cilantro & chives
Instructions:
- Start by preheating your oven to 400 F.
- carefully wash your sweet potatoes to remove any remaining dirt.
- Line a baking sheet with aluminum foil.
- Pierce the potatoes with a fork all over to allow them to steam properly.
- Coat evenly with butter and then season with salt and pepper and place them on the baking sheet in the oven to cook for 60 minutes or until you can easily Pierce them through with a fork.
- While the potatoes are cooking, heat a drizzle of olive oil in a pan over medium heat.
- Pat the chicken breast dry with a paper towel and season with salt and pepper all over.
- Add the chicken to the pan and cook for 3-5 minutes or until golden brown.
- Flip the chicken and add the broth to the pan cover and cook for 10 minutes until the chicken reaches an internal temperature of 165°.
- Once the chicken is cooked, remove it from the pan and shred it carefully with two forks.
- Combine the shredded chicken in a bowl with barbecue sauce to your heart’s content.
- Wash and dry your onion and then slice it very thinly. Add the onion to a hot skillet of oil and cook until translucent.
- Once the potatoes are done, carefully slice them down the center and add the seasoned chicken, carmelized onions, chopped cilantro or chives, jalapeños, sour cream, or any other toppings you like with your barbecue.
